I Alfredo'd the eggplant. I had an open jar so needed to use it up. Put a think layer of alfredo sauce on the bottom of a baking dish, put the (pre-salted and rinsed) eggplant slices on top, spread more alfredo sauce on top and baked. Topped with lots of grated parm at the end. It was good! Next eggplant will definitely be Parm'd.
