hi there I have been experimenting with bone broths, wanting to make really long simmering broth, as I understand that you can simmer as long as 72 hours

I've got homemade buttermilk from raw milk that must be two maybe three weeks old,
it has seperated,
now when I make more I use a little of the old to make a new batch and it seems like any buttermilk over 2 weeks old doesn't produce buttermilk for me again
