According to a prominent guinea hog breeder, if you cut off most of the fat from a pig with taint, you can grind in sow fat and it'll get rid of most of it. Also, brining and smoking will get rid of a lot of it. If you ever have a boar with taint, might be helpful. I'm going to stick with not eating boars. Too bad we can't ship them down to you, you'd have free meat the rest of your life! Lol

Cooking Wilbur. Making pulled pork out of ham cross sections, that’s almost 18 pounds. Party tomorrow!

That’s my redneck BBQ pit made from a water heater tank. I love it, it really rolls the smoke!

Just look at those fresh ham slices! Wilbur was literally one BIG A$$ HOG! Neighborhood party tomorrow at one of the neighbors house. Last year it was here at our house. Making eggnog too!

More cooking Wilbur LOL. Half hamburger and half ground pork. Notice the thumbprint in the middle of the party? It keeps the meat from drawing up.

You see the shoulders on this guy? HUGE! That will make some nice pork roasts! I swear, we could saddle him up and ride him!

Actually a nice looking hog! Yep, there are some huge hams & shoulders there .

About 50 yrs ago (!!!) I had one that large. Had traded something for him (piglet) and couple turkeys. Anyway, he was kind and friendly. Henry grew and grew, a big reddish brown hog. We arranged to have him processed and butcher asked weight -- I guessed 300#. When I picked him up he says "he was just over 500# and almost broke my machine" :D It was some goooood pork!!! Yep, a boar. Never used as I had no sows :lol:

Are you planning to keep or sell?

I love Wilbur....If I didn't have so many pigs I'd come steal Wilbur and let him retire forever...or not, lol! That's a lot of pork on the hoof there - I'm sure he'll be delicious!

Aw he sounds sweet! Bay you would make out up here, no one will buy boars so they're usually crazy cheap or free!
