Asparagus

I'm not allowed to eat potatoes at the moment. Maybe I'll feel differently in the spring, lol!

Good thing you love potatoes @sumi, you are in the right country for that!
 
Er, so after reading all this, I guess I didn't do a very good job at planting my asparagus this year :(. Oh well! We'll see if anything comes up in the spring, and I can always make a new bed if really necessary. We were sort of pressed for time and weren't able to much prep to the garden this year.

I sure am! I remember going to the supermarket for potatoes once, the first time we came over. Baffled by the selection on offer I asked another customer for a recommendation… 5 Minutes later I grabbed a random bag and made tracks lol The Irish love their taters!
 
We are lucky to live in an area that grows really good potatoes. I mean, like gourmet restaurants in NYC will pay $50 a pound (not a typo) for gourmet potatoes from Klamath County, Oregon. I think it's the volcanic soil. Oregon was created almost exclusively by volcanic activity. Unfortunately, right now, I'm not eating potatoes; instead I'm planning to dehydrate the 25 lbs of volunteer potatoes I found in my squash bed this year. They will make lovely lavender colored hash browns and scalloped potatoes later on.

Asparagus, on the other hand, I can enjoy NOW.... well, next spring anyway.
 
My landlord told me when they still lived in this house he used to grow vegetables in the backyard and grew the most wonderful potatoes. I'm looking forward to seeing what this soil is going to do for me. It looks amazing!
