I wonder if there is ever a time you should not substitute honey for sugar?
 
I was going to say that you had to use sugar to make Meringue Cookies, but I would have been wrong. I found recipes for Honey Meringue Cookies and Maple Syrup Meringue Cookies.

Want to guess what I am making tonight?
 
When I'm proofing yeast, I have much better results using sugar vs. honey.

There are two drinks that I make, switchel and an elderberry/ACV drink that I like the taste better using sugar or Pyure (a stevia/erthritol blend) instead of honey. I also could not get used to honey in coffee. But that's JMO.

Thanks for posting the chart. It's always been a guessing game.
 
I would like to be able to find some fresh Belgium candy sugar to play around with fermenting. Maybe one of these days I'll find some fresh.
