not a baker here, remember..LOL

but Tony is asking for muffins more I noticed
hmm...the boxes stink actually....I bought some blueberry muffin mix and it isn't thrilling (at my local discount store for .69 per box)

BUT
time to learn.....what is a basic delish muffin recipe. then can I just change it to be---blueberry muffins, choc. chip muffins, cranberry muffins, etc. etc.

thanks all you baker people out there!!

I use the one in "Joy of Cookng", but am interested in yours, miss_thenorth. I have the feeling you are a great cook.

Here are a couple good recipes.

Blueberry Yogurt Muffins
1/2 cup plain yogurt
3/4 cup milk
3/4 cup sugar
4 Tablespoons butter, melted
2 large eggs
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 tsp baking soda
1 - 1 1/2 cup fresh blueberries
1/2 cup chopped pecans

Topping Crumbles:
1/4 cup all-purpose flour
2 Tablespoons firmly packed brown sugar
Dash cinnamon
2 Tablespoons softened butter
1/4 cup oats

Preheat oven to 400. Lightly grease 12 muffin cups or use cupcake liners.

In bowl combine yogurt, milk, granulated sugar, 1/4 cup brown sugar, melted butter, and egg. In separate bowl stir together flour, baking powder, salt and baking soda. Combine the mixtures, stirring only until dry ingredients are moistened. Gently fold in berries. Spoon into muffin cups.

In a small bowl combine the topping ingredients with a fork until crumbly. Top muffins with crumb topping.

Bake the muffins for 20 to 25 minutes. Makes about 12 muffins.


All-Star Great Variable Muffin Batter
3 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 stick unsalted butter, softened
1 cup sugar
3 large eggs
2 teaspoons vanilla extract
1 cup sour cream

In a medium-sized bowl sift together flour, baking powder, baking soda and salt, then set aside.

In a large mixing bowl cream butter and sugar together with an electric mixer until light and fluffy and almost white in color. Scrape down the side of the bowl to incorporate all of the butter. Then add the eggs one at a time, beating well after each addition. Add vanilla and sour cream and beat until incorporated. Add the dry ingredients and mix on low just until blended.

Oil muffin tins or use cupcake liners.
Fill each cup 1/3 full of batter. Then place your choice of chopped apples, peaches, blackberries, blueberries, bananas, nuts, chocolate chips, poppy seeds, dates or raisins on the batter. Sprinkle with mixture of half/half of cinnamon and sugar, if desired. Fill muffin tin to 2/3 full with batter and add more cinnamon sugar mix on top, if desired.

Bake at 400 for 20 minutes. Remove muffins from tins after they have rested for 5 minutes.

This recipe makes enough batter for 16 medium size muffins. The batter can be kept in the refrigerator for up to one week.

Here is one I found online after buying a box of Raisin Bran only to find when I got home, it had no raisins.

Basic Bran Muffins

1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1 c. All Bran cereal (or Raisin Bran)
1 c. milk
1 egg
1/4 c. crisco

Mix milk and bran cereal, let stand about 2 minutes or until cereal is softened. Add egg and shortening and beat well. Add flour, baking powder, salt and sugar, stirring only enough to combine ingredients. * Pour into greased baking cups or muffin pans. Bake at 400 degrees for 20 minutes.

This makes about 12 muffins if you fill them a little less than 2/3 full.

*It's also great to put in whatever add ins you want - like nuts, raisins, bananas, blueberries, etc.

Okay, here goes....

3 cups whole wheat flour
1 cup sugar
1 tsp baking powder
1 tdsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
1 tsp cinnamon
2 eggs
2 1/2 cups**pumpkin, applesauce, zuchini, mashed banana etc** (something liquidy)
2 cups blueberries, apple chunks, cherries, raisins etc

Bake 350 for 15-20 minutes. I think it makes 18.

Our favourite combos are zucchini raisin, pumpkin apple, blueberry banana. You get the idea.....

Once you get used to the consisitency of the batter, try any combination you want.

ETA--I use whole wheat, but you could use regular flour

Slightly Sweet Muffins

1 1/2 c. flour
1/3-1/2 c. sugar
2 t. baking powder
1/2 t. salt
1 egg, lightly beaten
1/2 c. milk
1/4 c. oil

Combine first 4 ingredients in a large bowl; make a well in the center of mixture. Cmbine egg, milk & oil; add liquid mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans filling 2/3 full. Bake @400 for 20-25 mins. Remove muffins from pans immediately. Yields 10 muffins.

Apple: Stir 3/4c. peeled, chopped apple, 1/4 t. ground cinnamon and 1/4 t. ground nutmeg into the dry ingredients.

Blueberry: Fold 3/4 c. fresh/frozen berries or 1/2 c. canned into muffin batter.

Cranberry: Fold 3/4 c. fresh berries into the batter.

Jam: Fill muffin pans one third full, top with 1/2 t. of jam or preserves & spoon remaining bater on top.

Oat: Reduce flour by 1/2 c. & stir 1/2 c. quick-cooking oats in with flour.

Pecan: Stir 1/2 c. chopped pecans into dry ingredients.

Banana(my own variation): fold 3/4 c. mashed bananas into the batter, fill muffin pans & sprinkle with cinnamon sugar.


I make the blueberry & banana ones all the time & I have made the apple version too. All were/are great tasting & my family loves them. You can even make this batter ahead & freeze it in a baggie. To bake thaw, cut a hole in the corner of baggie & squeeze into muffin pan & bake as directed. Of course you knead the baggie a little bit before cutting it.

One secret to good muffins is not to over mix them, mix just until everything is moistened otherwise they can be dry & tough.

Wow--you all are awesome!!! I am thrilled to have some basic muffin recipes--something I hadn't even thought of. Thanks for bringing this up farmerchick! I especially like the idea of one that calls for something squishy. Sometimes I have pumpkin to use up, or bananas, or applesauce. Great versatility! Okay--enough exclamation points--to the kitchen!!! ;)

We have been making a lot of breakfast muffins and I recommend that you all use dry milk (re-constituted) rather than drinking milk...it will save you money!

Does anyone have any good savory type muffin recipes? My kids are tired of sandwiches so I was thinking savory muffins might be a good way to mix things up!

Explain savoury please???? You mean with maybe ham and cheese?? Oooohhhh.. the brain is orking now--( but the double u key has a mind of its on)

I am going to experiment ith this. I just got done my baking today, so hen I'm almost out, I ill play around, but ill think on it until then.

Today, I made zuchini raisin muffins, oatmeal chocolate chip cookies ( and replaced 1/2 cup of vegetable oil ith a mashed banana) Ranch flavoured holeheat biscuits, and rice crispie squares. I hate making rice crispie squares, but the kiddos like them, so I oblige once in a hile.

Usually hen I bake, I do it all at once so I only have to preheat the oven once--energy saver-- (yes I do realize I'm cheap :))
