Best way to preserve beets?

I love fresh roasted beets, and I would like to preserve some, but I don't know the best way. I have recipes for freezing, canning and drying, which way keeps them closest to fresh?

I am guessing dehydrating is probably out. What do you all like?

I can small beets into jelly size jars.

We like to can picked beets (with lots of liquid). Then we can use up some of the extra eggs that our girls lay during the winter. Our children love beets and eggs! :)

we don't eat them. for some reason everyone in the family hates beets...LOL


I have seen pickled beets? Pickling would be a good choice I guess?


(someone once said use the juice from beets to dye things--another use for them)

I love beets. Lol. They taste like sweet corn and potatoes almost.
My dad says they taste like dirt and moldy corn. :idunno

We've just been freezing them so far.
