Butternut Black Bean Cake

So I was not thrilled with the dense heavy almond flavor of the butternut brownie recipe, nor was a thrilled with the spongey texture of the BBCake....so I morfed them into something that everyone here seems to really like! The Butternut Black Bean Cake! :woot

1 c rinsed black beans
3 eggs
1/2 tsp sea salt
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/2 c peanut butter
3/4 c honey
4 Tbs cocoa - will use 5 next time
1/2 c mashed butternut.

Blend, then pour into a buttered 8x8 pan. Bake at 350 till a toothpick comes out clean ....sorry I did not time it! Maybe 30 mins?

It has a nice flavor and a nice cakey texture! Delish!

I just made another batch using the solidified fat from a can of coconut milk in place of the peanut butter, it added up to 1/2 cup.

I have company coming tonight and I if they turn out I will frost the cake in homemade chocolate frosting....I love using a splash of coconut milk instead of reg milk, so I think it will go nicely.

The second batch that I made with solidified coconut fat did not turn out. It just stayed too gooey!

If you use the whole coconut butter, it should turn out.
I need to buy another jar of that stuff :drool
I used mine up making Abi's Fat Bombs.

I'm going to have to buy a butternut squash. :drool I got none from the garden last year - darn squash bugs.

Any update on how long to bake it?
