Butternut Squash

I baked a butternut squash. What should I do with it now?

I don't like squash so I have no ideas. My SO and son love it, so I'll have 2 happy eaters tonight. :)
 
My kids love the stuff!

we mix brown sugar in it and put marshmallows on top.

We prepare it differently than you do, I think. You said you baked it.

I cut it into cubes, and remove the skin. Then put it in a pot with water and make it like you're making mashed potatoes.

This goes much faster than slicing them open and baking it...which seems to take a very long time.

Also, if you make it like we do, you can put it into a food-saver bag and freeze it.

Since I am a new owner of a pressure canner, next year I am planning on canning butternuts.

PS: We did make some chowder with it, but I was the only one in the family that liked that.
 
Scoop out of the skin, mash with a fork, and butter salt and pepper to taste. Yummmm!!! We had acorn squash last night, just like that. And the beauty is hubby does not like it, so there is more for us!!!!!
 
I did Acorn and Carnival Squash last night. Funny the Carnival looks similar to an acorn but is green and yellow in color. They both had great flavor!! I saved all my seeds.

I usually bake my butternut and do the butter and seasoning thing. I did can some a while back. I tried to saute the cubes with bacon and onions. They were a bit to soft and ended up as chunky mash.

But still tasted great!!!

I have been receiving them every time I go to the pantry. And have quite a pile. Ohhh, what about an old ice chest in the cold garage? That might do the trick huh???

I don't think in a sealed fridge would work the best, I would thin they need air circulation.

Wait for Me& to come on--she's the squash and pumpkin lover :lol:.

I'm curious too, since I plan on growing LOTS next year. for some reason this year, I can;t get enough of the squash!!!!
 
I have some I bought in October that are still good. They are in a wire crate in a room we usually don't use much. It is cooler in there. Just check them every once in a while to see if they are starting to get soft.
 
Even if you don't like squash you should try some, IMO butternut is different (and better) than other winter squashes, especially mashed with some butter.

Otherwise, if you are looking to use it for things *you* would like, use it in place of pumpkin in any baking recipe such as pumpkin bread or pumpkin pie, it works even better than actual pumpkin :)

Along the same lines as Pat, I made muffins once with buttercup squash. While my kids are not big muffin fans, they LOVED the squash muffins. however, I usually don't have enough squash leftover to make muffins with. so they are s-o-l.
