SS, the only soup I have canned is Farmerlor's cream of mushroom soup. It is a standby in our house when the kids want a hot quick meal. Since my kids are getting older and more active outside thehome, I am looking for more quick nutritious meals for them, so I am venturing into canned meats and beans.
Where is the link for that soup? I can't remember is it Gluten Free?

Here is the recipe, I copied and pasted. It is not gluten free, but I made ith with cornstarch instead of flour as teh thickening agent.


Okay, here's my base recipe:
CREAM OF MUSHROOM SOUP

� 1/3 cup butter
� 1 pound mushrooms, chopped or sliced
� 3/4 cup flour
� 2 quarts meat stock (chicken bouillon may be substituted)
� 1 T. salt
� 1 tsp. lemon juice
Melt butter. Add mushrooms and cook until brown.
Add meat stock, saving enough to mix with the flour.
Make a paste with meat stock and flour.
Mix all ingredients and heat until it boils.
Put in jars and process in pressure canner for 45 minutes
at 10 lb.pressure.
When opening to use, add equal amount of milk and soup.
Very good!
Makes 5 pints.
NOTE: I have tripled this before and it just fits
in my large stock pot. I buy mushrooms when they
are closing out at discount prices because they aren't
real fresh. They make the best soup! I use this soup
just like you would the soup you buy in the store.
My husband loves it!! I haven't bought store soup in years now.

You can also substitute clear jel (if you can find the stuff) for flour. It's a thickener made especially for canning made by the Sure jel people but I can't ever find it around here.

Thanks for re-posting that! :) It is very similar to the mushroom soup recipe that I already have, but I have never tried to can it. Worth a try for sure!

I love those discounted mushrooms. I often buy them to dehydrate.

oh hey i'm totally late for this - but we canned lots of our turkeys - and the $4 frozen ones from the stores.

i also cook all the way thru - bake the breasts and put all the rest in big pots and slow cook usually over nite. i tend to put the thighs in the slow cooker over night or for a couple hours.

big chunks from the breasts/thighs...and then pick thru the bones for the rest. the weird bits we freeze for the cats.

then hot pack.

process as it say. we've had great results.

So do you pressure can those things? Is there a basic time/pressure formula, or do you look up the directions for each type of food you want to can?

I want to make a lot of "convenience foods" also. There's just 2 of us, but sometimes we get so busy I forget to take meat out of the freezer for supper; since we got rid of the microwave that can be a real problem. My husband also makes the best spaghetti sauce in the world and I want to can that as well.

Thanks for posting the mushroom soup recipe- we use cream of mushroom soup a lot, and I know I can make it for way cheaper than Campbell's.

I have to buy some more canning racks for my pressure canner if they don't show up soon :( I'm sure I had them but now they are playing least in sight

Your welcome. :) We need to rename it as Farmerlor's cream of mushroom soup. ( what is Campbells :p) It is much cheaper and healthier due to wholesome ingredients. It is kid tested and mother approved. My kids realy missed Campbells when we cleaned up our diets, but this meets all of their expectations.
