Canning pumkin??

Ok I have a bunch of pumkins and I want to know if anyone has ever canned them or just freeze, looking for receipes or ideas :D

i'm about to work on my pumpkins and squash also. i think i'm gonna blanch-then-freeze

they can be canned, so i hear.

there are guidelines tho about not mashing or pureeing the pumpkin. i think its really dense and so the fear is that it wont be thoroughly heated.

we dont have a good place to store ours whole so we have to do something.

I have always cut them in half (or smaller if large) baked till softened, scoop out, puree and then freeze in 1-2 c bags.

There is just nothing like a fresh pumpkin pie :drool
