This makes a soft caramel popcorn. Not the type for making caramel popcorn corn balls. Mom usually puts it in baggies when making portions for giving away. She has had complaints that it's too easy to eat and goes too fast. I believe she got this recipe from one of my Great Aunts back in the late 60s.
This is sticky and needs to cool fully before attempting to bag. Mom usually spread out waxed paper on the table and we could eat it from there and pick the extra caramel off the paper. She uses parchment now since modern waxed paper sucks.
1 pound brown sugar
1 cup corn syrup
1 cup butter
Bring to a bubbly boil that can't be stirred down.. Boil 3 minutes. Remove from heat. Pour over popcorn immediately.
