I raise mine to 2 1/2 to 3 months old. They get HUGE. Their breast gets so big that they stand, take a couple of steps, then sink back down. I package 1 side of the breast per package.

Do you know what the live weights are for roos and hens at that age?

The smallest dress out under 6 pounds. The biggest over 8 pounds, but few at that weight. Mostly in the 6 1/2 pound to 7 1/2 pound range.

So you loose about 30% of the live weight after processing. That would mean your biggest "over 8 pounds" would have a live weight a little around 10 1/2 lbs. I suspect that's for roosters? But in any event.. that's just a little shy of what I had been processing mine at. I go more by how sorry I feel for them more than anything. They get so big they can't hardly move and that's when I say ok time to process, winner winner chicken dinner :)

It'll be over soon... fixing on stuffing and baking the first (biggest) roo this Sunday and sharing with my neighbors 😁

If I remember water temp around 140 degrees or so for loosing up the feathers?

i don't know the temp. I bring the canner to a boil, take it outside and put my little Coleman stove under it and dip them. dip them for a few secs, pull it out and see if the wing tip feathers come out easily. if not dio them again. don't hold them in too long or it will cook the skin.


that's the way we do it anyway
