Just checked in here... @CrealCritter you are about right with the timing... most will kill in the `15-24 month age range... depends on the time of year one starts with the animal... most like to have a spring calf on the cow, weaned off, go through another summer on grass and kill late fall... not have to feed so much through 2 winters...
Anything over 30 months you cannot get back the backbone or any cuts with the backbone... so no T-bones... due to fed rules on BSE (mad cow disease) that supposedly lodges in the spinal cord and brain... so nothing with backbone where the spinal cord goes through.
Also depends on how big you want the cuts as to how much grain you push and how fast of a growing animal it is... I like to do it between 22-27 months, a little more flavor in the meat and more marbling naturally.....maturity = marbling and flavor to a point. Some of the best hamburger is from older cows.... and alot of these cull cows actually they will cut out the better steaks and that is what discount places will serve as a steak.... a cull holstein that didn't breed back and gets fat and is eating at the bunk with corn silage and such is very good eating... and filets are usually always tender because it is not really muscle meat so doesn't get tough.

The calves have really grown in their first two weeks, it's nothing short of amazing how fast they grow. I seen them drinking out of the water though for the first time yesterday and they are nipping at grass and hay already too.

IT's all by the coffee pot which I moved yesterday so more than 1 cup can get poured at once. Trying to make the kitchen as efficient as possible seeing how it's so small. Just started my 2nd cup, got laundry going already and here in a few going to get sauce going for SPAGHETTI tonight.
I know you all already had this conversation but this is forecast #2😂

Yes PLEASE bring it on!! I'm in the Nor'easters section in VA. Just because they say it's going to do that doesn't mean it will though so I'm really not trying to get my hopes up but will be expecting it just in case they are correct.

@CrealCritter looks like the calves have "buddied up" well 😁 In that pic, looks like one mom is babysitting, giving others a break 💕

Fall cooling around here. 65 up to 75 today. Nice. Still overcast and wet out but, it'll clear some later. Back to job work this week. Hung out at home last week, in a non productive funk. :idunnoneed to energize with an attitude adjustment.

Time for cup #2.
