Started my day with coffee & pumpkin pie

Just coffee here. We're back on track with healthy eating after taking a week off. But, I gotta tell you, pumpkin pie for breakfast sounds absolutely heavenly!

Well.... the day after Christmas... snow! Over 6 inches.

we'll be heading into some rains and then shifting to snows and high winds (enough that i don't think Mom will be out tomorrow).

seeing this coming but also because i wanted to make chili anyways i made sure to get out yesterday to get all the ingredients i need to make chili today.

i cooked the beans yesterday so they're ready to go.

but also Mom said she'd rather have some sloppy joes instead of wimpy chili (what she would have if she was going to eat chili is a rather toned down version of what i make for myself which has a lot more chili, garlic, hot chilis, green peppers).

pretty much i'm ready to get cooking as soon as i decide to get to it. a good day for that as it is due to be rains anyways.

Bob's Red Mill potato flakes...perfect in a pinch. The wife wanted some sourdough bread, so I chose a potato flake starter. Miscommunication wife the wife, she ordered way too much, so we are stocked. I am a fan of this product

Since I'm only one eating, potato flakes work nicely. Yep, no peeling, cooking, mashing -- hot liquid, stir, set a couple minutes. Works for me. If more people, I'll go the peel route.

One package has 2 meals for me.

it's colder here now but last night was mostly rain up until nearly dawn as then i could hear the change in the wind and how loud the rain was/wasn't on the roof.

not much snow coming down at the moment and looks like a break for a while before more might land later. we'll see...
