My husband loves dill jalapenos that he buys from the store. I want to make my own but, I cannot find a recipe for them. I've looked on the internet and in my cookbooks. Does anyone have a recipe they would be willing to share? Thanks

I have this recipe. Perhaps substituting dill for the oregano?

Hot Peppers Marinated in Oil
3 lbs hot peppers
7 to 14 cloves garlic
7Tbs dried oregano
5 cups vinegar
1 cup water
1 Tbsp plus 1 tsp pickling salt
3/4 cup olive oil
Wear rubber gloves when handling hot chilies, do not touch the eyes or face. Wash peppers. Make 2 small slits in each whole pepper. Pack 1 or 2 garlic cloves and 1 Tbsp oregano into each of 7-8 sterilized pint jars. Pack peppers tightly into jars, leaving 1 inch headspace. combine vinegar, water, salt and oil and bring to a boil. Simmer 5 minutes. Pour hot solution over peppers leaving 1 inch headspace. Make sure oil is equally distributed across jars. There should be no more than two tbsp of oil per pint. Carefully wipe jar lip clean of all oil and place pretreated lids. Process in boiling water bath ( half pints or pints: 15 minutes; 20 minutes if above 6000 ft. Quarts 20 minutes or 25 minutes if above 6000 ft)

I found this one in my canning book (have not tried it):

1 cup cider vinegar
1/4 cup water
4 tsp liquid honey
2 tsp pickling spice
2 tsp pickling salt
2 cloves garlic, halved
1/2 lb jalepeno peppers, seeded & thinly sliced

Combine vinegar, water, honey, pickling spic & salt in small sauce pan. Bring to a boil over high heat, remove from heat and let stand 10 minutes.

Remove jars from canner. Place 1/2 clove garlic in each jar. Divide peppers between jars. Add 1/2 clove garlic.

Return pickling liquid to a boil. Pour over peppers to within 1/2 inch of rim (headspace). Process for 10 minutes for 1/2 pint jars.

Makes 2 1/2 pint jars.

I've never done dilled jalapenos but they sound interesting! I have made pickled jals. and candied jals.

Thank you! Isn't it funny how an exact recipe doesn't exist? Hmmm...this calls for some experimenting.
