The basic (off the back of the box) Lipton Onion Soup recipe - tweaked a bit - 'cause that's just my style... ;)

Lipton Soup Mix Meatloaf

1 envelope onion soup mix or homemade equivalent
2 cloves garlic, crushed
2 pounds ground beef
1 1/2 C bread crumbs or oatmeal
2 eggs
2 Tablespoons dried celery
1 teaspoon dried thyme or rosemary or savory
1/3 C ketchup
3/4 C water

Combine all ingredients in large bowl.

Bake 350F for about one hour in 9x13 pan.
Or bake for about 40 minutes in muffin tins for individual servings.
Alternate: using a large ice cream scoop, make individual meatloaf balls and bake as if in muffin cups. (This is a big hit with kids.)

Onion Soup & Dip Mix

2 C. powdered milk
3/4 C. cornstarch
1/4 C. beef bouillon crystals
3 T. dried onion flakes
1 tsp. dried basil leaves, crushed
Measure all ingredients into a ziploc bag and shake well. Or mix ingredients together in large bowl. Transfer to canning jar or storage container and store for up to a year.

To Use
1/3 c. Onion Mix equals 1 package store soup

Oooh, Kel. I love "tweaked" recipies.

Mine is close to yours. I often sneak in shredded zucchini for extra mass and greenery. ;)

I saw a guy on t.v. who soaked his fresh torn bread (instead of bread crumbs) in milk before mixing with other ingredients for meatloaf... he said it made it more moist. Have you ever tried that?

I don't make meatloaf, but I love it when I have it at other places. I will definitely try your recipe!

My mother in law used to do that, but I haven't. It was always very moist. I usually use old fashioned oats if I don't feel like making bread crumbs.
