potato salad and chips are gone. :P one more batch of 'taters in the pressure cooker.

Startin' to wind down the day and weekend.
 
14 quarts of canned potatoes, one quart of dehydrated slices, more in the dehydrator.
 
I have about 15 lbs of potatoes left. The jar supply is down to 50 empty quarts, and we still have tomatoes to do.
 
I still have beets in the ground yet to can, scallions (gonna dehydrate them). I've been making salsa with tomatoes and peppers as they ripen in the garden, so I'm getting 3 bushel of tomatoes from a family friend to make pizza and spaghetti sauce in a week or so. DW mentioned we are just about out of applesauce, plus I have 30+ meaties ready in five weeks which we are going to can the meat, make stock and soup, too. So I have no idea when we are going to get this all done. I have 15 large pumpkins I will probably make pumpkin bread and freeze, rather than trying to can the pumpkin.

We're good on beans, jams, corn, and relishes, and beef.

Oh heavens, what a list, we're maybe 50% done?
 
Well now that I think we are just half done. We still have potatoes, more corn (not to much more though), more chicken broth, apples, applesauce, pears, jam, pumpkin and squash puree, chilli, beef stew, another batch of veggie soup, bacon, and sausage. Maybe not even half :th
 
Okay, so I'm playing a little hookey from work right now. The house is quiet, and I'm supposed to be "working from home" - I'm getting back to it after a little something to eat. :D

I was rooting around in the freezer for something different (tired of eating leftovers) and I found some mini-loaves of pumpkin bread I made last Fall. A little bit of time in the microwave, some butter, mmmmmm.....:drool
 
Sounds fabulous! At least pumpkins can be set aside to deal with later.

Sounds like you need more jars!

If I ever move to OH I'll help you out with all that fun lol. I don't have a garden this year, but should have a small one next.
