I envy you guys canning...we just don't eat a lot of canned food. We don't even do jam that much. My kids like grape on peanut butter but we made apple butter and pumpkin butter and it just sits around. I finally started using the pumpkin butter in pancakes for breakfast just so it wouldn't go bad. With us I think it is a texture thing, we just like frozen or fresh better than canned. I have tried to freeze a lot and I am making my first batch of homemade tomato sauce for pizza today.

My kids just prefer to eat fruit plain...I freeze blueberries and they eat them frozen, grapes too!

Green squash are always frozen.

I like to make up pie filling and place it in a ziplock in a pie tin to freeze it. Then when I want a pie I can just get out a frozen (yes store bought) pie crust - pop in my filling-cicle and bake!

That is a GREAT idea! I will have to remember that!
