I have suspected food allergies since the doctors were convinced it was ADD. I did not believe that was the case. This was a kid who was a perfect baby and never cried to cry. Always slept through the night and was a great kid until around age 5 or 6 then all hell broke loose. The behavior was frustrating and the school was having a fit. I refused to medicate. First I started the Feingold diet, that showed significant improvement but was not the solution. I battled with the Dr's for testing for more than 3 years (trying what I thought would help elimination wise during this time) finally they referred me to a specialist, just to shut me up. The child showed no outward food allergy symptoms (rashes/diarrhea, stomach ache, etc) so they were convinced that was not the problem but they should listen to a Mothers instincts and I was right, the allergist came back with a long list of avoidances and we have been going down that path every since. It is a relief and a burden all at the same time.

around here anything using vension from the freezer is a cheap meal. One new one I have been using a lot lately is chicken pot pie. It will feed 4 on one chicken breast. I use what ever veggies I have, potatoes blanched, can of cream of chicken soup, shred one cooked chicken breast and combine all in a deep dish pie pan. cover with a pie crust and bake.

Home made sausage gravy with homemade biscuits and a veggie.

scalloped potatoes with ham lunch meat is a good stand by.

Even potato soup or corn chowder is easy and inexpensive.

:clap You are a better woman than me! I have changed an amazing amount however. I have gone from EVERYTHING looking better between two thick slices of bread to a half slice every day or two.

Yes I DO love spaghetti squash as well.

Which reminds me of ANOTHER favorite cheap dinner...

Spaghetti squashed baked and halved with butter and cheese on top!

My all time favorite cheap dinner is hamburger gravy, must be flavored with the juice from a can of green beans. Serve those as a side along with mashed potatoes to pour the gravy over. The topper is apple cider vinegar with chopped raw onion, salt and pepper. My dad's mother's recipe, they are both gone now but are surely missed.

Now that looks like a true original recipe! Very unique, sweet that you carry n the tradition :hugs

chicken & dumplins
ham & bean soup w/cornbread
bread & gravy-whether it's smothered over or for soppin up
most anything with noodles/pasta (gravy's good too)
rice-fried, steamed or under gravy or good mix of stir fried veggies with or without meat
most anything with melted cheese

carbs=herione addict.....yup that's us

yep, we have alot of "heart attack on a plate"...yes, we love our comfort foods and I keep throwing in more healthy selections and these things fewer and farther between. I find it hard though when hubby insists on "meat & taters" and isn't very fond of change. I keep tryin though.

4 Chicken Thighs sliced (boneless skinless, I have tried this with breast and it is not as good)
1 bell pepper sliced
1 onion sliced
2 bags of saffron rice ( I like Mahatma best)
a little oil

In a big sauce pan, cook chicken until almost done. I add the onions and peppers half way through cause I do not want them crunchy. Add rice and sautee it all around before adding the amount of water called for on the bags of rice. Bring to boil, cover and simmer until rice is done. Yummy, easy and cheap! You can add some green olives if you want also.
