For us take home beef is approx 65% of rail weight, maybe a little less depending on what we want. We do get all that you mentioned, including the organs for the pups. Our processor dry ages 2 weeks, so there is moisture loss also to consider.Of course, with cut loss, the take home meat is closer to $9 per #, than $5.40. We're not gonna winPay rail weight, take home useable is less. Of course, you can take home all the "loss" portion. Render tallow, bone broth & dog foods. Lessens actual "loss" by using it in some way.
