Of course, with cut loss, the take home meat is closer to $9 per #, than $5.40. We're not gonna win🤷 Pay rail weight, take home useable is less. Of course, you can take home all the "loss" portion. Render tallow, bone broth & dog foods. Lessens actual "loss" by using it in some way.
For us take home beef is approx 65% of rail weight, maybe a little less depending on what we want. We do get all that you mentioned, including the organs for the pups. Our processor dry ages 2 weeks, so there is moisture loss also to consider.

This is the butcher we use when we actually get half a beef at their current prices. Locally raised cattle. Its much cheaper than the butcher where my Mom lives.

It's interesting they have differnt prices for grain vs grass fed. I'm only assuming that also includes finishing since, there is no mention of the finishing. ~700 lbs for whole beef seems about right for rail weight.

It's always good for me to follow commodities, it helps give me some headlights to know what to expect in the near future. i try and remember to check weekly.

Live cattle traded $2.42 per lb today.

We can see the parted out prices at the grocery stores...makes sense to see bulk sides & quarters. Of course, it's overall a better price for each part being "equally" valued as a whole. I used to raise, 30 yrs ago 😂. Today, not doing. I buy some in bulk.

It's just good to know these things. Overall, pricing seems fairly level across the country. But when we do raise or bulk buy, there's a good amount of time between our refills. That's when prices are so shocking.

We've learned a few things raising our own beef. First, our side is our beef for the year. We consider hamburger universal beef. I can't begin to count how many dishes FB makes that uses burger. Pre-made 1/4 lb patties are super convenient. I can go from frozen to the plate in under 15 minutes with a cast iron skillet with lid. Roasts are essential for good wholesome meals. Brisket is for large gatherings, to feed a crowd and preserve leftovers for homemade pizza fridays. Brisket, mushroom, onion, sweet pepper and cheese is my absolute favorite pizza. Steaks are kind of the bottom for us. Yes we enjoy them and all, but just not as commonly consumed as burger. It's more for when my body has a beef, potatoes and nice salad craving. Stew meats we rarely use, so we have that ground for burger now. For us we get the entire side of beef, including butcher steak, fat, bones, organs and oxtail. It all can be made into food either for humans or pets.

Same here. Use more ground & only occasionally a steak. Like them but, only if really tender. I enjoy a good roast....extras into sandwiches or soups. :idunno
