The sauce is just like I remember it! Okay, so I've worked on this for 2 days straight and "enlisted" MyT Man's help today. We've slogged through 5 of the 5 gallon buckets and ended up with 1 heaping apple pie and 31 quarts of sauce. So we still have 3 buckets to go. I told him he better be prepared to eat a jar a week and not complain at the end of the year!!
Whew. I had no idea canning could be so exhausting. We're going out for a quick bite as a treat, then walk the dogs, clean up the kitchen and off to bed, hopefully before 8!
How many apple trees do you have? It's funny because I looked in the back of the car and thought, hmm.... only 8 buckets. I hope that's enough! Now I'm going, Man, that was alot!
It was a lot of fun though because we talked and told stories and laughed together all day.
ha! after about... oh ... 90 hrs of standing up and peeling you get to thinkin' man.. this IS a lot of apples!
we dont have any trees - we KNOW PEOPLE who have trees. the folks at the orchard give us the ones they cant sell (or they have to carry the heavy buckets of the ugly ones out to be composted) and the other folks give them to us b/c they are tired of mowing over them!
we take them all tho, b/c we feed 'em to the pigs. and when the winter has come one the turkeys LOVE to have something to do. chasing apples is superfun if you are a turkey

Good to hear the sauce turned out well. That's a tone of apples. After a day of canning I usually feel like I got hit by a truck. Or at least my feet do. I am thinking about getting one of those gel mats they sell for sore feet.
Why are y'all peeling at all? 'Round here we cut out the wormy parts, chunk 'em up, throw 'em in the stock pot to cook, put through the grindy thing that spits out the seeds and peels, put the seeds and peels through again, add cinnamon and brown sugar, stir and can. Ain't no taking time to peel for me!
Well, our lives are about to be turned upside-down. Since we weren't able to move this fall for school, it was time to look for another part-time job so we could work on being debt free. We had made such progress in 2009 by being frugal and before my hours got cut. Then this spring, my hours were slashed at work but we were able to make minimum payments and we were busy getting the house ready to sell, etc. So now we've not made much progress for 6 months on the debt.
So I've been talking to everyone I know letting them know I'm looking for a part-time job. Someone I knew from BNI a couple of years ago came in and said that he was actually in the process of hiring but it was a full-time job... would I be interested. So long story short, I'm going to work for him full-time 3rd shift. It is working in a hospital hospitality house that takes in people who can't afford to stay in a hotel when their loved ones from out of town are in the Lexington area hospitals. I'll start off as a temp for 3-4 weeks just to make sure I can handle the hours and then I'll move to full time permanent with a pay raise and benefits. I start Monday with training.
This is such a blessing on so many levels. I can't even begin to share how thankful and grateful I am. Truly our God is an awesome God!
