Green Beans, Bacon and Onions

Fry up 1/4 pound bacon in a skillet on medium-high heat until it starts to bubble up, add 2 or 3 cubed onions, 1 or 2 cloves minced garlic and let the onions soften. Add about 1/3 cup veggie stock and deglaze the pan, if needed. Add 2 pounds trimmed, cleaned beans, cover and cook on medium-low heat until green beans are tender.

I had this the other day with some grilled chicken. I can't believe how cheap fresh green beans have been this year.

I love that recipe. I do something similar but add some sliced red bell pepper for color and flavor and sometimes I throw in some new potatos. Mushrooms are also good.

I LOVE fresh grean beans! I like them with potatoes instead of onions though. Any special seasonings I should put with them?
