Help what do I do with all this zucchini ?

Then proceed to wrap each zucchini which has managed to grow to a foot or more in length. Next time your child has a fundraiser, send him or her out supplied with these phoney subs. Tell child to drop them off with neighbors or relatives and leave quickly. It's advisable that a responsible adult hover nearby in a get-away car.

@frustratedearthmother mentioned her zucchinis, which made me think we should have a thread here on what to do with all those… It's that time of the year again, so here's a bump and some more recipes:

Baked Zucchini Rounds

What you need:

2 Medium or one overgrown zucchini
1/2 - 1 cup parmesan cheese
salt and pepper

What you do:

Preheat oven to 425F
Line a baking sheet with foil/parchment paper and give it a light sprinkling of cooking spray
Cut zucchini into 1/4 inch thick slices
Arrange close together on baking sheet and season with salt and pepper
Cover with a generous layer of parmesan cheese
Bake for 15-20 minutes (until cheese is a light golden brown)
Go hide where no-one will find you and scoff the whole lot

Zucchini and Egg Bake

1lb zucchini - grated and cooked (frozen zucchini works well with this dish too)
1/2 cup greenbeans, chopped and cooked (optional but very nice)
1 tin creamed sweetcorn
150 ml self-raise flour
5 large eggs
5 ounces cheddar/gouda cheese - grated
Salt and pepper
1 tbs thyme, or mixed herbs, but thyme is best
Set oven to 350' F

Mix all ingredients together thoroughly, pour into a shallow (± 3 inch deep) oven proof dish and bake approx 1 hour or until cooked.

To test, stick a knife/cake tester into the middle of the dish, if comes out almost clean, turn the oven off and leave the dish in for another 15 minutes or so.

The lovely thing about this dish is that it can be made with previously frozen zucchini as well as fresh. When we have a glut in summer I grate a few pounds at a time and freeze it in 1lb packets. Then when I make this dish in winter I cook the zucchini from frozen, drain the extra water and add it still warm to the rest of the ingredients.

You can play around with this dish and add things like garlic, onions, bacon bits

You can also make candies with it. Peel and remove seed from LARGE heavy walled zucchini. Cut into 1 inch cubes. Simmer cubes in 4 -5 cups water with 3 packets Kool-Aid and 2 - 2 1/2 C sugar or sweetener to equal. simmer until cubes begin to get translucent. Drain and spread on dehydrator trays. Set at 125 degrees and dry about 16 hours until no longer sticky. Shake cooled candy in powdered sugar and store in sealed container.

Zucchini Jam

Ingredients:


3 c. zucchini, grated
3 c. sugar
1/2 c. lemon juice
1 (3-oz.) box apricot gelatin

Cooking Instructions

Peel and remove seeds from the zucchini before grating. Boil grated zucchini, lemon juice, and sugar together for 30 minutes. Add gelatin and remove from heat. Don't let it boil again. Pour into sterile jars and seal in a water bath (approximately 5 minutes).

Note: Fills 8 jars (4 ounce size)

That sounds delish!

The other day I chopped some bacon and onions and sautéed in a pan...added some cubed up squash and cooked until it was soft. Dolloped a little cream cheese in there until it melted and called it edible!
