Never did get to test drive any recipes for the GF gingerbread men so after running a last minute errand to Target, feeding my family the quickest home cooked meal on the planet, and milking the goat, I got busy. Keep in mind that trips to Whole Foods and our local food co-op all left me without the arrowroot starch called for in the recipe I had hoped to use. Not being able to use rice flour is a royal pain! I agonized over what to substitute and final figured I'd just use rice flour and tell him not to eat, only to decorate. So I pulled out the bag of Bob's Red Mill All Purpose GF baking mix only to find, that after about 36 hours of agoninzing, the stuff doesn't contain rice flour at all. Duh!! So I set about mixing the dough. I followed the recipe, it smells wonderful. I tasted a bit. Not bad for GF. But it's not nearly as doughy as the recipe seems to indicate. Great! I scraped it out of the mixer bowl and wrap it in parchment and threw it in the freezer.
Ah, time to wrap. Everything. I hadn't even started before last night. So I started on DS's things. Which are tucked into every nook and cranny in this little house that you can imagine. And please, imagine away!! Because I'm not sure anymore where some things are! I wrapped and I wrapped. DH went to bed. Even the dogs gave up on me. So I wrapped the last of what I had pulled out, put everything back away in the little closet in the basement that locks, and brushed my teeth. When I suddenly remembered, the cookies aren't going to bake themselves!!!! Yikes! It was now 10:45 and my alarm is going off at 5am. Ugh. I got the dough out he freezer. It was now perfect for rolling out. Right that second and not a second longer. As soon as it was out of the freezer it becam a gooey mess all over again. Ah, and where was my rolling pin??? Oh yeah, it was in the drawer that the mice got in and they ruined it. I don't have one! Shoot. I looked around.... something cylindrical with straight sides.... ah! I think that bottle of Stoli will do nicely. It's not like I can drink the stuff since going grain free. I got one cookie rolled and cut out but then had to put the dough back into the freezer. sigh. Well, Gingey (sp?) #1 is now cooling on top of the fridge, well out of dog reach and his twin is finishing up. We may actually have GF cookies for DS to decorate at school tomorrow! They ain't bakery pretty but they have 2 arms and 2 legs and a head and no extra parts so they'll just fine.
Oh!! And my icing sucess is worth bragging about! The class will be using corn syrup and/or starch laden canned frosting. I looked around at what I had. Bottle of Lyle's Golden Syrup. Hmmm. What would happen if I poured out a few spoonfuls of that and added something powdery to thicken it up? Like, say, cocoa powder. I've got that, fair trade, organic, allergen free... ooooo, it looked like chocolate icing. It even tasted ike chocolate icing. Put it in a sandwich bag and DS can snip off the tip of the bag and pipe it onto his cookies as glue! Glue for all the HFCS free candies and dried cranberries and raisins I got for him to decorate with! :bun
Both cookies are now done and cooling. I'm going to drag myself off for a few minutes of sleep before heading off the HS where I am hoping that we don't get yet another email asking us if we witnessed Monday's fight and if we did, did we happen to see anything that looked like a weapon in either girl's possession.
