I'm bringing this old thread back up because I have been doing some experimenting. I have discovered that the one whole egg recipe does not mold or turn in the refrigerator nearly as fast as the egg white only recipe. I don't know why, but I have tried it enough both ways now to be sure.

In reading back through the posts I would suggest that if you didn't like your first efforts and try making mayo again, use a good canola oil (not olive oil which is....oilier...) and use a good mild vinegar rather than the harsher lemon juice. I tried the mustard in it and didn't like the results. Once again be sure to have everything at room temp.
