I can't believe the topic of nettles is coming up all over today.

I have tons of stinging nettle, we were discussing its uses. It is a useful plant but also has a powerful sting if you brush up against it during the wrong time of year. Ouch! It really hurts.

They have medicinal qualities as well.

I've been waiting to make cheese until I had some rennet. I find it hysterical that I've been researching ways to use this stupid nettle plant I have growing all over and at the same time wanting to make cheese but not having RENNET!

Certain thistles can also be used. No matter what you use, it will be on otherwise obnoxious plant! :p

The only other alternative that I know it of is the stomach lining of a calf, kid, or lamb that is very young, not eating solid food yet. It can be cut into squares and dried and stored and used this way, although fresh is best.

Rennet is made from the lining of a calf's stomach. If you ever get a chance... I would love to try it. As soon as I find a healthy freshly dead calf that I can dissect and take the stomach from...
