I cure the trotters like I do bacon - smoke 'em and throw them in when I make bean soup - or split pea - or whatever. Best soup EVER.
I could never get excited enough about the ears to bother cleaning them. We cut the jowls off the head to make bacon out of them. I made headcheese once because I wanted to try to use everything- a lot of scrubbing and sawing and almost no meat (like a cup - maybe a little more) by the time you've taken the jowls off. Compost it - you haven't wasted anything.

Thanks everyone!

I got this from my Foxfire book: you can "rake hot coals out on the fireplace hearth (or outside?). Put the feet on the hearth with the hooves against the coals. When very hot, the hooves can be sliced out of the meat easily, and the remainder of the hair scraped or singed off, and the meat scraped clean."
