I have a vegetarian neighbor that smokes vegetables.

I've smoked corn on the cob and some big russett potatos. They were awesome Just threw them into the smoker along with a beef brisket, left for the day and came home to smoked dinner bliss complete with several guests. Beats the heck out of trying to get everything done at the same time with the BBQ. Smokers are like crockpots

Smoked red jalapeno peppers! and big sweet onions too!
I made buckboard bacon with a big shoulder roast, you just debone it and brine it and smoke it.. it is like a cross between Canadian bacon and regular bacon-even better if you can get your butcher to NOT trim off the extra bottom fat!

I smoked a 13 pound briskit last friday and we will finally finish it up tomorrow. 13 pounds is a whole lot of briskit but it was oh so good
