Hey, MyKidLoves, funny farm, Theo, and baymule got this thread off to a great start... but, you know, most everybody here cooks, right? We can come up with more recipes than this, right? Think a little bit, folks. We'll all benefit from sharing some possibilities!

If we post more and keep the thread going, we'll create our own SS raise-it-at-home cookbook. :cool:

I don't know many veggie recipes. We mostly eat meat with potatoes, rice, corn or beans....

Well, do you ever bake chicken in a sauce? How about a homemade barbecue sauce for grilled beef? People prepared potatoes in many, many different ways. And what do you make for holidays?... any special turkey stiffing, for example?

pizza

you make the crust
you are growing tomatoes, so you can do a pizza sauce
add any vegies/meat you like
and i am sure you can do goat cheese on top

#13 Stir Fry

Cut goat meat into bite size pieces, about 2 cups, more or less.
1/2 cup almonds
8 dried hot peppers

Saute these in iron skillet until meat is almost done. Take out and set aside.

2 cups broccoli (separated into small florets)
1 cup sliced carrots
1 cup cauliflower (separated into small florets)
1/2 cup chopped red cabbage
1 cup dehydrated tomatoes, chopped

Saute vegetables so they are heated, but still crisp. Add meat back in and heat through. Serve over rice with apricot glaze and 1/2 cup sunflower seeds scattered over the top.

Apricot glaze- 1 cup apricot jam. 1/4 teaspoon powdered ginger or 1/2 teaspoon fresh grated ginger and 1/4 teaspoon crushed red pepper, and 1/4 cup water. Place in sauce pan and bring to a boil, reduce if too thin, pour over stir fry!

You can use what ever meat you desire and what vegetables that are in season.

This is another soup, a delicious Mexican Soup (or "tortilla soup")...

ingredients:
1 quart tomatoes in juice (either diced or blended)
3 quarts water (can consist of up to 1 quart soup stock on-hand)
3 medium-sized onions, diced medium-small, sauted, and
(optional) 2 or 3 largish stalks of celery, diced & sauted with the onions
2 medium-sized chicken breasts (or can use eqivalent amount of dark meat)
2 cups hominy or corn kernels
1/3 cup uncooked rice (again, optional - we may not be growing that)
2 rounded tsp chili pdr (you can use more if you like real hot soup)
1 rounded tablespoon cumin pdr
2 tsp lime juice
cup leftover brewed coffee
2 large (or 3 medium) cloves of garlic, crushed
(optional, again - not completely Mexican) 2 level tsp curry pdr
Dash of salt (if needed)

cooking:
Put quart of tomatoes with water (or water/soup-stock) in a soup pot, and add chicken, at medium-high heat if chicken is frozen; medium heat if it is not. My wife prefers to bake the chicken, first - but I don't think it's essential.

Add diced onions (sauted), rice, and hominy or corn kernels. Add chili powder, cumin, lime juice, garlic, and curry powder (if youre going to use it), and stir in. Avoid actually boiling, and stew for a minimum of one hour. Remove chicken and cool it enough to handle; dice into roughly 1/2 -inch cubes; return these to the soup.

Cover, simmer soup for at least another 90 minutes. Top-up water level if it evaporates out very much. Taste and add more seasonings, if desired.

You can add torn tortilla pieces 10 minutes before serving, if desired.

sluge (this is what we call it-cause that is what it looks like lol)

potatoes- pealed and cut into med size peices
boil till done- drain but leave some water
green beans- about 1/2 to 1/4 of the amount of potatoes
if fresh, cook first
meat(precooked)- i use bacon and sausage, my sister likes ham, my mom likes hamburger. any will do.
salt and pepper

it is very filling and is even better the next day!
this is a favorite here

I was looking at what is on her list. Turkey, cows and rabbits aren't there and that is what we eat the most of.

True... If we read her question, rather than her subject line, it does narrow down what people might suggest. But to fill this thread up with 365 recipes, maybe the "we" in "what we can produce" has to be intepreted in terms of all of us who post on SS.

I haven't really been playing along (although I have definitely been reading this thread) because the original parameters don't meet my own--I can't produce all that Egz can, and she stores different foods to what I store.

I have a cycle of 30 meat-dish dinners that we rotate throughout the year, mixing it up with vegetarian dinners, "breakfast for dinner" and evenings when we just have a sandwich or soup or something else simple. These are our meat dinners:

Chicken:
Roast
Zanzibar (chicken chunks cooked in a coconut milk/tomato paste/onion/curry type sauce--served over rice)
Souvlaki (grilled or baked chicken chunks seasoned with olive oil, lemon juice, oregano, served with rice, potatoes, grilled veggies)
Quebeois (chicken pieces cooked in a garlic/maple syrup/ACV/soy/ginger sauce)
Curry (chicken pieces baked in a yogurt curry sauce--served over rice)
Burgers
Pot Pie
Enchiladas/Tacos

Pork:
Roast
Cranberry sauce roast
Chops
Curry chops
Sweet Mustard chops
Orange Sauce chops/roast
Pizza (sausage)

Beef/bison:

RECIPES:
Whole Wheat Bread

1 tbsp active dry yeast
1/4 cup warm water

2 1/2 cups hot water
1/2 cup honey
1 tbsp salt
1/4 cup olive oil
5 cups whole wheat flour (we grind wheat berries)
3 cups all purpose flour

Soften yeast in warm water for 10 minutes. Add rest of ingredients, mix, knead until smooth and elastic. Let dough rest 10 minutes, shape into 2 loaves, let rise 1 hour or until about doubled in bulk. Bake at 350F for about 45 minutes, cover loaves with foil last 20 minutes to keep from browning too much.
Pizza Dough

Makes 2 medium thin crust pizzas.

1 1/2 cups warm water
1 tbsp active dry yeast
1 tsp sugar
1 tsp salt
3 cups flour, white or whole wheat (we grind wheat berries)
splash olive oil

Soften yeast in warm water for 10 minutes, stir together rest of ingredients, knead till smooth and elastic, put dough into oiled bowl and let rise 20 minutes. Punch dough down, cut dough in half, sprinkle two oiled pizza pans with cornmeal, stretch out dough with your fingers, add toppings and bake at 450F for 15-20 minutes.
Waffles

3 cups whole wheat flour (we grind wheat berries)
2 tbsp baking powder
1/2 tsp salt
3 tbsp sugar
2 eggs
2 1/2 cups milk
3 tbsp oil
1/2 tsp vanilla

Stir all ingredients together, drop by 1/4 cupfuls into waffle iron, bake until iron stops steaming.
Meat Sauce for Pasta/Lasagne

1 lb raw or 1 pint canned ground beef/bison
1 L tomato sauce
1/2 cup tomato paste
2 cups frozen cubed squash, mashed
1 tbsp minced onion or half an onion, chopped
1 tbsp italian seasoning
salt & pepper
1 tbsp honey
splash of red wine

Brown meat, add rest of ingredients, simmer till hot, serve over pasta or layer with lasagne noodles for lasagne.
Tamale Rice Dish

1 lb ground beef/bison
onions, garlic, green pepper (optional) chopped
2 pints home made salsa
1 cup frozen corn
1 tbsp honey
Chili powder and cumin to taste
1/2 cup water
2/3 cup white or brown rice

Brown ground beef and chopped veggies, add remaining ingredients, simmer until rice is cooked, pour into casserole dish.

Sprinkle with 1/2 cup grated cheese, dab with sour cream, and serve with plain nacho chips.
Curry Tuna

2 cans tuna, broken up in medium saucepan
garlic
1 cup sour cream
1 tsp (or more to taste) curry powder
1/2 cup mango chutney
red pepper flakes to taste

Stir ingredients together over medium heat, cook till heated through, serve over rice.
Tuna Casserole

Cook 4 cups noodles (macaroni, butterflies, rotini) in boiling water, drain.

Stir in 2 cans chunk tuna (drain, then break up in can) and homemade Cheese Sauce (flour & butter roux, milk, 1/2 cup grated cheddar, 1/2 tsp mustard, salt & pepper) plus some frozen veggies (we like peas). Bake topped with cracker crumbs.
We usually eat this with carrot sticks or salad :)
Baked Beans

Soak 4 cups dry small white (I use Navy) beans overnight in cold water.

Drain and rinse beans twice with cold water, drain.


Stir into drained beans:
2 onions, diced
1/2 cup ketchup (or tomato paste plus a splash of vinegar)
1/4 cup brown sugar
1/4 cup molasses
1/4 lb chopped cooked bacon (or ham)
1 tsp dry mustard
salt and pepper to taste
and enough water to cover
--simmer in crock pot on low for 8 hours.

OR after soaking and rinsing, drain beans and add rest of ingredients then pressure cook at 12psi for 45 minutes. Perfect every time!
Chicken Enchiladas

1 lb ground (or leftover shredded) chicken or turkey
1 pint jar home made salsa
1 cup frozen corn
1 can (or equivalent cooked from dry) black beans
salt & pepper & taco seasoning to taste

Brown ground chicken, stir in remaining ingredients and warm through, divide mixture evenly amongst 12 tortillas and roll up, place in rectangular baking pan (I use Pyrex) and top with dabs of salsa/hot sauce and shredded cheese, bake til cheese is golden and bubbly :)
Made with:

Whole Wheat Tortillas

3 cups of whole wheat flour (we grind wheat berries)
1/2 tsp baking powder
1 tsp salt
1 cup of warm water (may need a little more)
1/3 cup olive oil

Mix ingredients together in bowl, knead a few times, form into ball, let rest 10 minutes. Cut ball into 12 equal portions, roll each piece into round, fry briefly on each side till done.
Zanzibar Chicken

1 onion, chopped
olive oil or bacon fat
chicken, cut in strips
garlic
1 t ginger
1 t cumin
1/2 t turmeric
1 t curry
salt & pepper to taste
1 can coconut milk
1 small can tomato paste
1 T lemon juice

Saut onions in oil/fat, add chicken and spices and brown chicken, pour in coconut milk and tomato paste, bake half an hour.

Serve over Jasmine rice and garnish with cilantro if desired.
Chicken Pot Pie

2 cups cooked chicken, chopped/cubed
2 cups chicken stock
1 onion, chopped
celery, chopped
Rosemary, salt & pepper to taste
2 cups mixed veggies
4 potatoes, cubed

Bake in casserole dish (no lid!) until hot and bubbly and veggies are starting to get tender, stir in ~1 tbsp flour to thicken, cover with pastry or biscuit/dumpling top and bake till golden.[/i]
Pepper Beef

Brown stir fry strips or stew beef after dredging in salt & peppered flour, add a jar/can of crushed tomatoes and lots of chopped onions, slow cook all day, add chopped red or green bell pepper about an hour before serving--serve over rice or noodles.
Crock Pot Cranberry Sauce Pork Roast

Place roast in crock pot, season with garlic/salt/pepper, pour jar/can of cranberry sauce (we use homemade) over top and add 1/4 cup water, cook on low all day and enjoy with coleslaw etc.
Salmon Quiche

Make pastry for a one-crust pie and fill with a mixture of:

1 can salmon
1 onion, diced (I use the food processor for this recipe so that the pieces are small)
4 eggs
2 cups cheese (we like a mixture of Swiss and Jarlsberg)
salt, pepper, dill

Bake till set.
Teriyaki Salmon

Pour bottled teriyaki sauce over fish portions and grill or bake 15-20 minutes till fish flakes with a fork.
Sweet Mustard Pork

1/2 cup molasses
1/4 cup dijon mustard
2 tbsp apple cider vinegar
salt
pork chops

This is a freezer recipe, so I mix all of the ingredients together in a freezer bag or casserole dish and freeze. Then thaw it in the fridge and pull the chops out of the marinade and grill or bake. You can heat up the marinade in a pot on the stove and baste the chops with it as they cook!
