Over the last 40 years I have read up on, bought books, watched videos, but now it is time to put it in action. Its time to learn which method is going to work best for me. Everyone does things different, so how one person chooses is not how someone else may choose. I have "Talked" about building a smoker in the past,

You're right....personal choices for preservation. What's most convenient for one isn't for another. Smoked meats are delish. Personally, I'm still freezing, dehydrating & canning for any long term. But I like that smokehouse!!
