Yep, how you process it is definitely a factor. Most people that have had it and don't like it, I find, are eating venison that was taken to a processor.
You never know what will happen if you drop off your deer and then don't see it until it is in packages. If anything gets mixed up with someone elses or if they put spices or fats that you don't like in it then you may not be happy with the taste.
I don't add any fat to my ground meat anymore. Last year we added a very small amount of pork fat that we purchased from the grocery store. I didn't like the taste of it. We ate it, mostly in spaghetti, tacos, and such....stuff with lots of spices in it.
This time we didn't add any fat or spices to the meat, we'll do that when we cook it later. As far as the tacos...yep, prepare it like normal with the ground deer meat instead.
I also like to do fajitas....cut the meat into strips and cook it in the skillet with onions, lots of peppers of different colors, and some spices. Serve on tortillas...sour cream, guacamole, lots of cheese and salsa....YUMMY. I got to find an alternative to the tortillas now that I am GF though....I may just roll everything in a corn tortilla and stick it in the oven with some cheese on top like an enchilada.
