Lorihadams-- hi guys...been busy!

Perhaps when I had it, it wasn't processed properly?

I'd love to try your deer tacos! So you use it ground just like you would use hamburger meat?

Thanks for sharing those tips, I think Hubby and I may need to rethink the eating-deer thing and add it to our menu.

I know growing up, the vension we had was always prepared by overcooking it in the crockpot.
Well, all meat was done that way.
When I grew up, I learned all about proper preperation of meat in general.
And how to process is correctly.

Can you say 180 degree difference?
:drool

Yep, how you process it is definitely a factor. Most people that have had it and don't like it, I find, are eating venison that was taken to a processor. :hide

You never know what will happen if you drop off your deer and then don't see it until it is in packages. If anything gets mixed up with someone elses or if they put spices or fats that you don't like in it then you may not be happy with the taste.

I don't add any fat to my ground meat anymore. Last year we added a very small amount of pork fat that we purchased from the grocery store. I didn't like the taste of it. We ate it, mostly in spaghetti, tacos, and such....stuff with lots of spices in it.

This time we didn't add any fat or spices to the meat, we'll do that when we cook it later. As far as the tacos...yep, prepare it like normal with the ground deer meat instead.

I also like to do fajitas....cut the meat into strips and cook it in the skillet with onions, lots of peppers of different colors, and some spices. Serve on tortillas...sour cream, guacamole, lots of cheese and salsa....YUMMY. I got to find an alternative to the tortillas now that I am GF though....I may just roll everything in a corn tortilla and stick it in the oven with some cheese on top like an enchilada.

GF tortillas?
Buy Bobs Red Mill Masa Harina, and make them! Super easy and so yummy.
Just make sure you are using Masa harina, cause if you use raw unsoaked cornflour , its hard on the body.

Really? :celebrate

I'm new at this GF free thing....I made pizza tonight with a GF Pantry french bread/pizza dough boxed mix. I would not use it for pizza again but I would definitely use it for a breakfast pizza, with sausage and eggs and bacon and cheddar cheese. It came out kinda biscuit-y.

The dough was really wet...couldn't work it with my hands at all. Had to use a spatula to spread it on the pans. It was the consistency of cake icing. I dunno.

It wasn't bad, wasn't good either....the toppings were tasty though!

My mother makes a gluten free batter bread for sandwiches.
I'll ask her for it.
It passed muster with my dad, so I know its good!

Oh that would be wonderful!

I've been eating sandwich stuff on lettuce wraps, tuna salad on corn chips, and peanut butter on apple slices.

Can you tell I miss bread? :P

Well, hubby went hunting this morning....had 5 clients again this morning....another $1000 in the bank!!!

Just got off the phone with him and they have killed 12 geese so far. :celebrate

We were supposed to package the chickens last night but after scouting and getting everything set up for today's hunt it was just too late so I'm going at it solo here in a few minutes....gotta finish washing a few dishes and make some room on the counters.

I tried to rearrange the freezer yesterday and it was a nightmare. I rotated all the new stuff to the bottom and the old stuff to the top but I actually had several packages of stuff frozen in a layer of water on the bottom that I couldn't get out. It is too cold to defrost it now (it's on the porch). It'll have to wait till spring I guess.

Well....off to play in raw meat!
