So if I can just jump back to the veggie/carb question....
One issue that I have with calling this lifestyle Low Carb and talking about avoiding carbs is that veggies are carbs and carbs are important. What I don't want is to give the impression that you should be counting carbs.....it is enough to think about with filling the bulk of your diet with low GL foods.
Now there are some people like Wifezilla and Abifae who need to really limit all carbs, but that is not the case for *most* who are looking to lose weight. Now if you follow the suggestions that we have given here and you are just not losing weight after several weeks then perhaps it is time to look at your intake of good carbs.
So it is important to be clear there are good carbs and bad carbs.
Veggies, beans & dairy provide good carbs. They are nutritionally dense foods

The bulk of your intake should still be low GL.
Bad carbs would be anything processed/refined (chips, crackers, coffee creamer, sweetened yogurt, treats) and grains (wheat, rice, etc) which offer little nutritional value. Grains are a good carb when eaten infrequently....for weight loss they should not be a large part of any meal.
I hope that makes sense, I just do not want to vilify carbs across the board because they are necessary!
