Old-Fashioned Vinegar Pie (this recipe is over 100 years old)
1/2 C softened butter
1 1/4 C sugar
3 eggs
2 T vinegar
1 tsp vanilla
Cream together butter and sugar until light and fluffy. Add vinegar, eggs and vanilla; beat well. Pour into 8" pie crust. Bake at 350* for 45 min or until knife inserted halfway between center and edge of pie comes out clean. Cool on rack.
It tastes somewhat like a lemon pie but not quite the pucker power. A very light and refreshing summer pie!
