I bet they are pretty tasty. Of course... I wouldn't make that statement unless one used fresh, home grown potatoes. Sumi, why don't you make a batch, and report back???

Ive always found it a bit too sweet but my husband likes it. Hubby's Mom made potato candy many times, so I learned. One piece is enough for me but I know some people who gobble it

Left over mashed potatoes from the night before were used. Add enough powdered sugar to make a dough. Roll flat. Smear on whatever thickness of creamy peanut butter you prefer, then roll and cut.
