Pumpkin Flour

Never heard of such a thing as pumpkin flour. So I replied in order to follow this thread.

I will add my wife and I were in town last week. There is a gas station that always has a relevant message on their sign. Last week their sign said "Pumpkin Spice Sucks". My wife said ain't that truth, this time of the year it's all about pumpkin spice.

I like pumpkin pancakes made with the flesh of sugar/pie pumpkins in replacement of pancake mix. I'm curious if anyone has a recipe that they have tried and like that uses pumpkin flour? Please don't link to some random internet recipe. That's hit or miss (mostly miss).

After dehydrating 9 trays of pumpkin puree I ended up with 2 full pint jars of pumpkin flour. The rest of the pumpkin went to 12 large pumpkin muffins, one 9" and two 8" pumpkin pies and 7 bags of 1 1/2 cups of pumpkin puree. The pumpkin muffin recipe takes 1 1/2 cups of pumpkin puree.

This was all from one Big Moose pumpkin.
