Quick Corn Fritters

1 T oil
1 can corn, drained
1 cup unsifted flour
1/4 cup milk
2 eggs, lightly beaten
1 tsp baking powder
1/2 tsp salt
Oil for frying

Heat oil to 400F.

In mixing bowl, stir ingredients together with fork Drop by large spoonfuls into the hot oil. Turn fritter, frying until both sides are golden brown. Drain on brown paper bag or paper towels. Serve hot with warmed maple syrup.

These sound so good!!
I can't wait 'til after I have the baby so I can try some of these great recipes you keep posting!! (Fried foods are really hard on diabetes sugar levels.)

LHA - This was my mom's recipe. I posted my other fritter recipe too, which is a yeast dough fritter. The recipe makes 100! So I freeze them and just pop into the microwave when we want one or two....
