I wonder if you could make some version of a maple syrup pie? Maybe find a recipe that calls for lemon juice and substitute maple syrup? Oh! I know! Make a pecan pie, use maple syrup instead of karo syrup!
1/2 c. oil (melted coconut oil, cold-pressed sunflower oil, or avocado oil)
5 c. whole, rolled oats
1 c. chopped almonds or walnuts
1/2 c. sunflower seeds (sesame seeds are good, too)
1/2 c. flax meal (or 1/4 c. flax + 1/4 c. wheat/oat bran)
2 tsp. cinnamon
1/2 tsp. salt (omit if using salted sunflower seeds)
optional: 1-2 c. dried fruit mixed in after cooling
My changes: - no nuts. I am not a huge fan of nuts.
- no cinnamon, no salt
- 1 c. each of roasted sunflower seeds AND pumpkin seeds mixed in with the grains mix
- my fruit mix-ins are 1 c. each of dried tart cherries, golden raisins, and Diced Dates with Oat Flour. last batch included diced, dried apricots.
Pressing it into the pan and not stirring while baking does make it stick together better - not perfect, but good enough that it isn't a spoon meal. I probably didn't press it together hard enough. I will try better next time.
