Recipes that use Maple Syrup, please

I have an over-abundance of maple syrup in my cupboard and my DH is bringing home 6 more pints. We only use maple syrup on pancakes and oatmeal.

Anyone willing to share a favorite recipe that uses maple syrup as an ingredient?

Glaze for over spice cake or gingerbread 4 Tablespoon maple syrup 2 Tablespoon melted butter 2/3 cup powdered sugar whisk well till smooth then spoon over bread or cake

Sitting down here in Texas, the Land Of No Sugar Maples...….that sounds like a terrible problem to have! :\

I found a recipe for Granola that has maple syrup as the sweetener. It is really good. I adapted it to my tastes - no nuts, no craisins, no coconut. I used Rolled Oats, Rolled Barley, ground Flax, roasted sunflower seeds, roasted Pumpkin seeds, golden raisins, dried tart cherries, and chopped Dates w/ Oat flour.
Now I just have to tweek the recipe a little bit to make it clump together instead of having to eat it with a spoon...

Maple Meringue Cookies

4 egg whites
1/2 tsp cream of tarter
1/8 tsp salt
1 c. maple syrup

Beat egg whites until soft peaks. stir in cream of tarter and salt. SLOWLY add maple syrup as you beat until stiff peaks.
Spoon onto parchment paper. (I like to pipe the meringue out)
Bake at 225 degrees for 1 hour.
Turn off oven and leave in oven for 3 hours or overnight. Do not open oven.
Move to sealed containers right away when you remove from oven.

I like small, bite sized meringues. This recipe will make 4 cookie sheets of 1" meringue cookies.

My ex used to drizzle it over bacon a it was cooking...almost forgot about that. Gotta admit it was pretty tasty, but doesn't really use much syrup so probably not much help.

I always drizzle the maple syrup over my bacon when I have pancakes. DH laughs at me, but it is so good that way. And messy to eat.
Tonight I am going to make Maple glazed Carrots.

I had maple syrup in my Cream of Wheat this morning.
