In my job today I was asked to type of a chart of a various sauces. The chart has 20 different sauces, ingredients and how to make them. I'd be willing to e-mail that to anyone who wants it. It's in a 11x17 format and in MSPublisher (03). You wouldn't necessarily have to print it to use it.

Sample format:

Sauce Butter Flour Milk/cream Onions/Shallot Egg Yolks Wine Stock/Sauce Directions
White (Basic) 2 T 2 T 1 C Melt butter over low flame. Add flour graduallystirring constantly for 4-5 minutes. Slowly add scalded milk, continue cooking, stirring constantly until thickened and smooth

(the formatting doesn't translate very well here but you get the idea. There are some repeating ingredients listed and then non-repeating ingredients are in the directions.)
