Shelf Life Of Canned Chicken

If food is canned correctly it will last almost indefinitely the quality of the food won't be there but it should be safe to eat. Just make sure the seal has not been compromised.

Just be sure the jar is kept dry and has no rust on the lid. When you open the can make sure the seal was tight and you get a good pop as air goes in. Then check the contents by smelling. It should smell like what it is (chicken smells like chicken etc..) Finally be sure to heat the meat or broth for at least 20 minutes at a boil before using to be double sure of safety.
Ditto. And look for bubbles or dried bits of food on the sides of the jar or near the lid.

I read that it's unlikely that a jar is infected only with Botulinum, so there may be other smelly stuff going on in there.

Also, I read that food shouldn't be slimy or badly off color, especially compared to that batch.
