Got an elderberry jelly recipe, Free? You have to add sugar and lemon juice right?

I try to eat as fresh and local as possible. Even when it is not "fresh" seasonal buying to freeze or preserve for later use, is still a great option. When you buy things in season and preserve them you always get the best possible bang for your buck! I often buy vegetables at our Farmer's market that have been organically grown, but lack the credentials to label them as organic. This gives me higher quality at a far better price than in the stores.

You DO have to watch what is ripe when. Sometimes even a couple of weeks can make all of the difference in price.

Our Market has lots of melons, peaches and other stone fruit and trucks of sweet corn. The tomatoes ripened all at once in the heat so I was seeing a huge glut of tomatoes there as well today.

I got:

26 ears of sweet corn for $10.00 and

over 90 pounds of canner tomatoes for $30.00!! The tomato guy also threw in a box of squishy ones for chicken food!

Three weeks ago the tomatoes were $5 quart sized box full. ;)

I've made it in the past by juicing them and mixing the juice with sweeter purchased juice (100% and organic) such as pomegranate or grape. You can often purchase a small serving-size bottle at health food stores. Then I sweeten to taste as needed with a bit of stevia extract and follow the directions in the package of no-sugar pectin.

ETA: Sorry I was going to say to this that we have always had a global economy. It just used to be spices mostly that were traded by way of sailing ships . . . .
And of course, there was salt cod which became a "staple" from North America to Europe by the Basques over 500 years ago.
 
I am diabetic and was given eating pears.... made preserves for myself using sugar free strawberry jello, pears and no sugar pectin at the end....great...now I had 18 pints..I say had because I "had" to give a few pints away to special people...Ha.....I was offered pears again and I cannot wait to put them up, "no giveaways this batch".... I have a pear stripper, you talk about nice and time saving, plus saves the fruit.....do you use one? electric but I will use it as long as I can..... Love this thread....G
 
Kings...be carefully about canning anything with jello. It's an animal product. It should be pressure canned from what I understand.
 
Ground coffee is up to $14-16 for 33 or 36 oz containers. Giant Eagle has 36 oz packages of whole roasted beans for <$10 if you use your customer card. Bought a couple and threw them into the freezer.

we have a great sale on it going on here. 11 oz vacuum sealed bags for $2.88. I had to call my aunt to stock up on it :lol: I don't "do" coffee myself :sick
 
I love coffee. Whole beans are %7/pound for organic and free trade at Sunflower.
