this morning Mom cooks even more for an army after last night's carrot cake (and some cupcakes too since we ran out of pans) extravaganza. it was elbow macaroni, tomato chunks cheese and onions. a bit thin to my tastes but i can doctor it up if i'm feeling more picky or just eat it and enjoy it as the more simple version of goulash than normal. i would want a few more ingredients in it like some more cheese on top, a little bit of garlic salt and some mushrooms. if we had some more sloppy joe's made up and available i'd mix that in as then it would be very close to our normal goulash (which when i was making it with the more plain elbow macaroni and tomato chunks it was very very good to me as the noodles were still firm and not mooshy).
it will, as it is, keep me fed for a few days and that is pretty much the main thing that really counts

and i won't really mind it. i'll challenge myself to think outside of the normal box i might have and come up with some crumbs for the top (potato chips, veggie straws, crackers) or perhaps some spices like oregano, cinamon, nutmeg, dill, basil, etc. we're not short of those...
and then there is another one i may enjoy too that is very simple and easy, butter... (and if you know me you'd probably be surprised by noticing i haven't mentioned peanuts or peanut butter

but that isn't appealing to me at the moment).
