One of my favorites is portobello burgers. Rachel Ray has a great recipe that includes a roasted bell pepper sauce and (melted) smoked mozzarella. The great thing about it is it is a really quick recipe to whip up -- the sauce you can make ahead and then you just have to quickly marinate the portobellos and dress up the burgers.
ETA: Oh and you grill the portobellos, or you can pan sear them.
