Creamy Soft Caramels
2 c. heavy cream
1/2 c. sweetened condensed milk
2 c. lite corn syrup
1/2 c. water
2 c. sugar
1/2 c. softened butter cubed
Line 9x9 pan with foil sprayed with non stick spray
Combine cream and milk in a saucepan on low heat. DON'T BOIL, just warm it.
Combine corn syrup water and sugar in another saucepan on med-high. Stir until dissolved. Reduce heat and bring temp to 250 degrees
Add butter chunks and warmed milk/cream mixture slowly.
Cook until temp reaches 245 and color is caramel brown.
Remive from heat and pour into pan. Allow to sit overnight.
Cut into 1 inch squares and wrap in wax paper.
Stores at room temp up to 2 weeks.

Yeah it would, we have bon fires here a lot too. Nothin better than starin at fire. I love those carmels chewys they are the best

I'm sitting in front of my fire right now. And, it feels good! I just need to figure out a better way to use my lap top than on a bed tray on my lap! It works fine if I'm on it in bed, but not so much in this chair!
