Oh, I like this thread! This is the third year of cultivating our small property. We don't live there yet--we rent the farmhouse to a friend. But we are slowly turning an old pasture into a large garden. When we retire, we'll move there. Then I'll be ready to have a couple of goats. In the meantime:

2011

POULTRY

Eggs

MEAT

Chicken (I've only butchered 1 so far, but I have 5 cockerels who will be butchered in fall)

OTHER LIVESTOCK

Honey, 2.5 gallons (our second year as beekeepers!)

FORAGE/FEED

Just free ranging for the chickens so far.

VEGETABLES

Garlic -- we are self sufficient in garlic!
Potatoes -- ditto
Blackberries -- I guess you could say we are self-sufficient in them ...
Elephant garlic -- it is feral on our property and we have all we could ever want.

These crops have not yet produced a harvest:

Broccoli
Cabbage
Tomatoes
Brussels sprouts
Hubbard squash
Zucchini

So you see, we've made a start. My goal is to become self-sufficient in various foods every year, putting more land into production and gaining expertise as I go along.

GOALS FOR 2012:

POULTRY:

I have 5 new pullets this year; nest year I expect to have eggs to sell and hatch.
Raise some meat birds and freeze meat (but not ready for self-sufficiency yet)
Hatch replacement hens and cockerels, hopefully with the aid of broody hens!

FORAGE/FEED:

Raise field corn to use as supplemental food for chickens
Fence in the chicken yard so they can spend more time out of their run foraging (we used to let them run free but we lost three to predators)

VEGETABLES;

Expand garden. Improve soil with compost.
Year-round plantings of cabbage. Achieve cabbage self-sufficiency!
Grow a small patch of field corn, which will supplement chickens and make cornmeal for us. Corn self-sufficiency!
Continue potatoes, which were easy to be successful with and provide a lot of food.
Find a way to grow onions--voles eat ours to the ground.
Establish a new bed this fall for planting blueberries in spring, ditto for strawberries. This will take a lot of ground.

NEW PROJECTS:

Build a hoophouse. I'll get a start on it this fall.
Buy an old tractor. Use it for cultivation and for cutting the lawn (we currently do an acre with a lawnmower, not a rider.)

This year there wasn't much garden to brag about and really none to preserve:
Tomatoes
Zucchini
Peppers
Basil (best of all the garden)
Eggplant
Broccoli
Green Beans (died)
And plenty of weeds, including lambs quarter, which is edible
Apple trees

I also have:
Chickens (will butcher extra roos and maybe do some meaties this fall) and eggs
Ducks (may butcher my first this fall, but they have so much more personality than chickens :/) and eggs
Turkey (just started a pair of breeders)
Geese (I use them for guards and eat most of their eggs)
Rabbits (just fertilizer since they are mini Rex)

Foraging:
Raspberries
Blackberries
Elderberries
Some greens

Wow! You guys have long lists! Here is ours:

Eggs from the duck and chickens and occasionally meat (mostly roos)

Milk, cheese and ice cream from the dairy goats

Meat rabbits eventually (don't really have enough to eat them yet)

From the garden:
Zucchini, peas, spinach, some grains, corn, tomatoes, pumpkin, potatoes, assorted squashes, radishes, strawberries, blueberries, raspberries, oregano, grapes and beans.

I make soap and laundry soap and bake my own bread and pizza dough.

We have nettles and blackberries growing wild that we harvest in season.

Not a long list, but I hope to improve on that!
