I simply marinate my thinly slice beef in soy sauce (I use Tamari) and Louisiana hot sauce or Worcestershire sauce. I put enough in a ziploc to thoroughly coat and refrigerate for 12 hours or so before placing in the dehydrator. The salt in the soy sauce helps to preserve the meat. Works great.
