What are you Freezing Today?

#25 pounds of tomatoes.Had #100 pounds but canned the rest into sauces and juices. Going out of town and will do the later
 
More beans and chopped peppers. Freezer raspberry jam and sauce, too :)
 
I was just cruising back through this and reading about not peeling tomatos.........I'm glad I'm not the only one who's started skipping this! I'd wondered if there was a "reason", or just asthetics. I've decided we're fine with peels, so that's one big step gone from the prep stage.

That has saved me endless time over the years! I can crank out 14 jars of diced tomatoes in 1 hour or less without getting the skins off!
